ingredients

mixture

  • 6 egg yolk
  • 6 ounce sweetened condensed milk
  • 7 ounce evaporated milk
  • 1/8 teaspoon salt
  • ~1/2 teaspoon vanilla extract
  • 1/4 tablespoon lemon/lime juice
    • optional

  • ~1 tablespoon sugar

  • oven/stovetop
  • large bowl
  • whisk
  • steamer
  • fridge

instructions

ramequin prep

coat ramequins with ~1 tablespoon sugar

broil at low heat until the sugar is melted

mixture

add 6 egg yolk into a bowl and mix until broken

mix in 6 ounce sweetened condensed milk

mix in 7 ounce evaporated milk

mix in 1/8 teaspoon salt and ~1/2 teaspoon vanilla extract

  • optional: mix in 1/4 tablespoon lemon/lime juice

strain mixture ~3 times

distribute evenly among ramequins

steaming

start steamer and let the water boil

lower the steamer heat until it's bubbling just slightly

steam ramequins for ~1 hour or when a toothpick stabbed in the middle comes out clean

let cool

refrigerate overnight
